Mint Chocolate ripple cups
Ingredients
For the cups
- Dark or milk compound chocolate
- Coffee cups/deep silicon cups
Mint chocolate ripple
- A sprig of fresh mint
- 2tsp dried mint
- Chocolate ripple ice cream
- 5-7 chocolate cookies/biscuits
Method
- Melt your chocolate using the double boiler method or using the microwave
- Pour chocolate into the cup, turning the cup slowly to make sure it evenly forms a thick wall around the cup. Make sure the chocolate is thick enough so when you remove the chocolate from the cup, it holds.
- Turn the cup over a cooling rack to make sure the excess chocolate drips out. Repeat the process to form another layer especially is the chocolate is not thick enough. Make sure the chocolate dries completely.
- Next crash your chocolate cookies roughly with a rolling pin or food processor and put in a bowl.
- Add the slightly melted chocolate ripple to the bowl & a teaspoon of dried mint leaves. Mix thoroughly.
- Put this ice cream mixture in the chocolate cup.
- Put the cups in the fridge & freeze for 10mins
- Remove and garnish with a fresh mint leaf.
- Serve & enjoy!
