Peach melba trifle

Ingredients

  • 200ml Dairyland Whipping cream.
  • 11/2 TBSP icing sugar.
  • 1 tsp. vanilla essence
  • 1⁄2 tsp cardamom, 1⁄4 tsp. cinnamon, 1⁄4 tsp. nutmeg.
  • 2 Fresh peaches/or nectarines/or pears.
  • Peach Melba ice cream.
  • Cookies – 6 pieces.
  • Dates chopped
  • Hazelnut chocolate grated.

Method

  1. In a bowl, mix the whipping cream, icing sugar and vanilla essence using a hand mixer or whisk until stiff and set aside.
  2. Crush the 6 cookies in a bag and mix this into the whipping cream.
  3. Chop the fresh fruit (peaches or nectarines or pears) into thin vertical strips. Mix the chopped fruit with cardamom, nutmeg and cinnamon.
  4. To assemble, take 2 glasses and put 2 scoops of Peach Melba at the bottom. Then arrange the fresh fruit mixed with spices on another layer. Next, add a layer of the whipping cream & cookies mixture.
  5. Top your trifle with chopped dates and hazelnut chocolate flakes.
